Ingredients
- 2-3 chicken breasts cut into small pieces
- 1/3 cup peanuts (optional)
- 1/3 of a bottle of peanut sauce, or more if you like more sauce and more spice. We like House of Tsang Bangkok Peanut Sauce.
- 8-10 lettuce leaves washed, we like using romaine
- 2-3 cups cooked rice
Stir-fry chicken and peanuts with peanut sauce in small skillet over med-high heat until cooked. I like to keep the chicken covered when not stirring at first so it doesn't dry up. Put some chicken and rice on some lettuce and enjoy! Add more sauce if you're feeling it!
