Grilled Mahi-Mahi with Mango-Avocado Salsa



Prep time: 8 min
Cook time: 8 min
Serves: 2

Ingredients
  • 2 Mahi-Mahi fillets
  • 1 tablespoon olive oil
  • Salt, pepper to taste
  • ½ cup avocado, cut in small chunks
  • ½ cup mango, cut in small chunks
  • 2 tablespoons chopped green onion
  • 1 tablespoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • Pinch of salt and pepper
Directions

(start cooking rice if needed)
Pre-heat grill. Brush Mahi-Mahi with olive oil and season with salt and pepper. Grill for about 4 minutes per side. 

Meanwhile, in a small bowl mix together avocado, mango, onions, lemon juice and olive oil. Season with salt and pepper. 

Serve Mahi-Mahi with rice and top with Mango-Avocado salsa.

Fish Tostadas with Chili Lime Cream

Ingredients
  • 1  lb. fresh tilapia or cod fillets
  • 1/2  tsp.chili powder
  • 1  lime, halved
  • 1/2  cup sour cream
  • 1/2  tsp.garlic powder
  • 8  6-inch tostada shells
  • 2  cups shredded cabbage mix
  • 1  avocado, halved, seeded, peeled, and sliced (optional)
  • 1  cup cherry tomatoes, quartered (optional)
  • Bottled hot pepper sauce (optional)
Directions

Preheat broiler. Sprinkle fish with 1/4 teaspoon of the chili powder and 1/4 teaspoon salt. For chili-lime cream, in bowl squeeze 2 teaspoons juice from half the lime. Stir in sour cream, garlic powder, and remaining chili powder; set aside. Cut remaining lime half in wedges for serving.

Place fish on unheated greased broiler rack; tuck under thin edges. Place shells on baking sheet on lowest rack. Broil fish 4 inches from heat 4 to 6 minutes per 1/2-inch thickness, until fish flakes with fork. Break in chunks. Serve tostadas with cabbage, chili-lime cream, avocado, tomatoes, lime, and pepper sauce

French Bread Pizza

Prep Time: 5 min

Serves: 4-6


Ingredients
  • 1 long loaf French bread, split and halved
  • 1 (14 oz.) jar Ragu pizza quick sauce
  • 2 (8 oz.) pkgs. Sargento natural shredded Mozzarella cheese, divided
Options:
  • 1 c. yellow pepper, thinly sliced
  • 1 c. red pepper, thinly sliced
  • 1 c. zucchini, thinly sliced
  • 1/2 c. pitted sliced black olives
  • 1/2 c. pepperoni slices
  • 4 tbsp. minced fresh herbs
Directions
Put French bread on baking sheet. Top each quarter with Ragu pizza sauce and sprinkling of Sargento Mozzarella cheese. Layer vegetables and pepperoni evenly on top of each quarter. Sprinkle with herbs. Cover with remaining Mozzarella cheese. Preheat oven to 375 degrees. Bake 15-20 minutes. Serves 4 to 6.

Creamy Cajun Chicken Pasta

Prep time: 10 min
Cook time: 15 min
Serves: 8


Ingredients
  • 1 package linguine pasta
  • 1 tbsp olive oil
  • 4 chicken breasts cut into bite size strips
  • 4 tsp Cajun seasoning divided, or more as desired
  • 1 large bell pepper, we prefer red
  • 1 green onion chopped
  • 4 tbsp butter
  • 1 tbsp flour
  • 1 cup whipping cream
  • 1 cup milk
Directions
  1. Cook linguine in a large pot according to the box. Drain. 
  2. In a small skillet, add oil, chicken, and 1 tsp Cajun seasoning. When the chicken is 2 minutes from being done, add peppers and green onion. Stir fry for two minutes. Remove from heat. 
  3. In a separate medium pot, make a roux by melting butter and whisking in the flour until bubbling and light golden brown, be careful not to burn it. Add cream, milk, and Cajun seasoning and bring to a boil for 1 minute until thick. 
  4. Pour the cream sauce and chicken mixture into the pot with the noodles, stir, and serve!
Most types of pasta can be substituted. If you don't have cream, I'm pretty sure you can just use more milk.

Southwest Chicken Wraps

Prep time: 5 min
Cook time: 10 min
Serves: 4

Ingredients
  • 2-3 chicken breasts cut up to bite size pieces
  • 1/3 cup BBQ sauce divided, we like Sweet Baby Rays
  • 1/3 cup ranch divided, we like peppercorn ranch
  • 8-10 tortillas, warmed
optional:
  • black beans
  • diced tomatoes
  • shredded lettuce
  • shredded cheese
  • corn
  • avocado
Directions
Stir-fry chicken with half of the BBQ sauce and half of the ranch in a small skillet over med-high heat until cooked. Mix remainder of BBQ sauce and ranch in small bowl. Warm tortillas. For individual wraps, spread a spoonful of sauce on tortilla, add chicken and any other toppings you enjoy. Wrap it up and enjoy!


Easy Lettuce Wraps with Rice


Prep time: 5 min
Cook time: 10 min
Serves: 4

Ingredients
  • 2-3 chicken breasts cut into small pieces
  • 1/3 cup peanuts (optional)
  • 1/3 of a bottle of peanut sauce, or more if you like more sauce and more spice. We like House of Tsang Bangkok Peanut Sauce.
  • 8-10 lettuce leaves washed, we like using romaine
  • 2-3 cups cooked rice
Directions
Stir-fry chicken and peanuts with peanut sauce in small skillet over med-high heat until cooked. I like to keep the chicken covered when not stirring at first so it doesn't dry up. Put some chicken and rice on some lettuce and enjoy! Add more sauce if you're feeling it!

Oven Baked Ziti



Prep Time: 2 min
Cook Time: 40 min
Serves: 6-8

Ingredients
  • 1 box of Ziti/Penne pasta (1lb)
  • 1 jar of your favorite red pasta sauce (26oz)
  • 1 jar of water
  • 1-2 cups shredded cheese
Directions
Preheat oven to 350. Mix uncooked pasta, sauce, and water in a 13" x 9" glass baking dish. Cover with tin foil. Bake for 30 minutes. Remove from oven and stir. Top with as much cheese as you want. Put back in oven uncovered for 10 minutes or until pasta is cooked.

I love this meal when I just don't feel like spending hours in the kitchen and making a big mess. We sometimes add cooked ground beef or cooked sausage. Delish!
